“Aunt Cecil’s Green” is a green-when-ripe beefsteak which I believe is an heirloom from Kentucky. It is difficult to find the history for this one. The epidermis is yellow, but the flesh stayed deep green as it ripened. It may be more yellow-green when picked ripe from the plant rather than at breaker as I must do. The taste is more sweet than tart, a fruity green-when-ripe flavor.
