Guindilla Verde is a popular pepper used for tapas, harvested in the green stage and pickled in white wine vinegar. Guindilla Verde is reportedly popular in the Basque region of Spain, but I do not know if it originated there. “Guindilla” means “hot pepper,” and may refer to any number of chiles. Guindilla Verde is a specific guindilla chile, with a shape that is longer and thinner than Hatch-type chiles. NOTE: For some reason, my Guindilla Verde seeds are slow to germinate. They germinate well, but take their sweet time.
