“Ros de Mallorca” is a delicious sweet pepper that comes from the island of Majorca (Mallorca – Catalan; native name), Spain. The name is in Catalan, in which “Ros” means “blonde,” which refers to the color of the ripening fruits.
This is a large pepper and can grow to 3” wide and 8-10” long. The fully ripe color is ruby red.
It is said that Ros de Mallorca is used in the making of the queen of Mallorcan sausages, Sobrasada (Sobrassada – Catalan). I cannot confirm this, as all of the recipes and descriptions I found merely indicated “paprika” was used, and not stating that the paprika was specifically made from Ros de Mallorca. It seems a bit thick-walled for paprika, but perhaps Spanish paprika uses thicker-walled peppers than does Hungarian paprika. I use thick-walled peppers myself in the smoked paprika I make each year…I like the fruity sweetness they add to my mix of spicy and sweet.
