“Tabasco” is an institution at the table if you grew up in Louisiana, as I did. I can still remember visiting Avery Island, home to Tabasco® sauce. The air smelled of tangy, peppery yumminess. The “mash” aged in white oak barrels up to 3 years, and that truly is an aroma that I will not be able to recreate…even more fragrant than you get from a newly opened bottle of Tabasco® sauce. Dear Mr. McIlhenny, where would our table condiments be without you? Edmund McIlhenny founded the McIlhenny Company in 1868 on Avery Island, Louisiana.
Just as important as the sauce itself are these little gems of spicy peppers. My grandma always had a bottle of pepper vinegar on her kitchen table, to sprinkle over greens or whatever you like. I make it too, from Tabasco peppers.
Having grown this pepper literally forever, of course I have never taken a good photo of it. I did find a picture from 2013 that I turned into a drawing just for my Eye Candy Quality Control.
