“Rama de Mallorca” is one of many long keeper or winter types that are regional varieties in Spain. I believe the practice is to harvest the entire plant at once, and hang it upside down to ripen and use over time. I read that the nature of the long keeper varieties is to ripen over a period of time if picked while blushed. If picked too immature, however, it reportedly never ripens. I have not tested the “never” part of that theory; however, I did eventually throw away a number of other long keeper varieties after watching them sit on my trays for three months with no apparent change in color. I tossed them out because I do not have time to wait…pepper and eggplant seasons directly follow my tomato season and I need room for their harvest. This season, I did leave as many fruits on the plant as possible to nearly full ripeness, and I saw a nice color change to what must have been nearly fully ripe redness.
