“Snow Steak” is a variety by Tom Wagner. I think that it may have been released at F5, but I am not certain of that. I found a description in a forum, that was stated to be copied from Tom Wagner’s newsletter (post was made Feb 2013): “Snow Steak is F-5 seed. Turk’s Turban crossed with Pineapple. An excellent white tomato with clear epidermis. Fruit is 4″+ in diameter. Slightly fascinated fruit with a bit of catfacing adding to the heirloom like quality of this selection.”
I did not experience any catfacing on my fruits, but it seems that there was a little on those grown by my seed source and dear tomato forum friend, who has kindly let me use two of his photos here to bolster mine. (His photos have the hand holding the fruit.) My fruits for Snow Steak were a little later and smaller than White Beauty. They were more yellow at full ripeness too, but definitely with a clear epidermis, a white beefsteak. The flavor was balanced with a little less acid than sweetness. Altogether, this is a very nice variety to add to my short list of white beefsteaks.
