“Yuma Red” is a showy, red okra donated to the seed bank at Native Seeds/SEARCH by member and volunteer, Ed Kingham. Ed was given the seeds in the 1980s and selected for continued plant vigor in his Yuma, Arizona garden. Yuma Red supposedly has less “slime” than other varieties, which I noted myself as well. Of course, if a person is offset by the mucilage (which is a water-soluble fiber and healthy for us), then cooking with plenty of oil in a cast-iron skillet seems to further decrease the “slime factor.” I remember cooking okra this way for my adopted father. He loved me to cook “a big bait of” okra with onions, bacon, and garden tomatoes in his well-seasoned (and oh-so-heavy to my 11 year-old arms) large cast-iron skillet. At any rate, Yuma Red grew excellently in the hot and humid Bunny Hop garden, attracting attention with showy red stems and gorgeous red pods.
