Texas Hill Country Red okra is sold under a variety of names, including “Hill Country Red,” and “Texas Red.” This okra comes from an area of southern Texas called “Hill Country,” that extends from Austin down to San Antonio and then west about 200 miles.
I have seen a few of these very fat, short, ribbed okra types, and I like them best used for cornmeal-fried okra. The reason, of course, is that you get large wheels of crunchy goodness rather than little nuggets. In addition to the really nice pod shape, Texas Hill Country Red okra also has dustings of red on the green pods, and red mottling with red veins on the green leaves. The plant is very decorative and quite productive.
