“Inokra Panigang” (also called Siling Panigang) is my newest chile acquisition from the Philippines. I love it. This is a picture perfect long chile, said to be mild, but I find it at least medium hot. This could be because I tasted it in the red ripe stage, but I believe it is most commonly used in the beautiful bright light green unripe stage. This chile is commonly used in the green stage in the popular Filipino sour soup called sinigang. This is a VERY useful chile in the kitchen. The flesh is thicker than a cayenne, and the perfect shape makes it easy to de-seed, if you want less heat. The heat being medium to mild is also very useful, as it can be added to a number of dishes that would be overwhelmed by a hot cayenne.
