“Ao Daimaru” is a Kyoto heirloom, from the Saitama Prefecture in Japan. For this reason, you may also see it called “Saitama Ao Daimaru”; however, these are the same thing. You will want to harvest this fruit before the pale jade green gains a yellow or lime cast. The flesh is smooth with relatively few seeds. The name roughly translates to “big blue round(ed).” The “blue” in this case historically referred to a pale blue-green, rather than to a deep purple anthocyanin as we call “blue” tomatoes. Ao Daimaru has mild flesh compared to most purple varieties, and is said to be considered a delicacy in Japan.
