“Barker’s Hot,” also called Barker x-Hot Hatch Green Chile, as well as a few other versions, is one of the hottest of the New Mexico green chile varieties. The fruits are 5-7 inches long in good growing conditions, and make a great Chiles Rellenos for the very brave. I prefer to use them as roasted and diced green chiles in soups, enchiladas, chili, and tamales.
