“NuMex Primavera” is an awesome mild jalapeno from New Mexico State University, introduced around 1998. It has a complex pedigree, and was bred carefully for flavor as well as important commercial traits. I particularly love the productivity. Plants of 16 inches high and about 30 inches wide covered themselves with fruits, looking like Christmas trees with red lightbulbs. In a comparison of characteristics that the University provided, NuMex Primavera produced almost twice as much as Tam Jalapeno and Early Jalapeno. The heat is approximately 8,600 SHU, compared to 21,000 SHU for Tam and 45,000 for Jalapeno M. I particularly like the option Primavera provides of cooking with that distinctive jalapeno flavor without knocking your socks off. Think about making jalapeno salt, then rimming the glass of a margarita with it…tingle and taste, but no pain. Many people really do love the heat of jalapenos, but there are plenty of hot ones to choose from. There are fewer really excellent mild jalapenos in terms of flavor, mild heat, and productivity. NuMex Primavera is my favorite of these so far.
