“Thai Green Frog Fingers” is one adorable little eggie. The best use of Thai Green Frog Fingers is to harvest very young, while still sweet and tender. If allowed to ripen to yellow, they will have tough skins and bitterness. Harvest these while they are green and white, as shown in my photo.
The size makes these a perfect kebab eggplant, just like Thai Lavender Frog Eggs. I like them grilled and served along with other veggies on a bed of couscous.
