“Thai Lavender Frog Eggs” is one of my new favorite eggplants. These are little tender morsels, grown on a very bushy plant as wide as it was tall. Fruit are set prolifically, early, and until frost. The best use of Thai Lavender Frog Eggs is to harvest very young, while still sweet and tender with soft immature seeds. If allowed to ripen to yellow, they will have tough skins and bitterness. Harvest these while they are pale lavender and white.
The size makes these a perfect kebab eggplant. You can string 1-2 bite per chunks of marinated lamb, mushrooms, fat cherry tomatoes, pre-boiled pickling or pearl onions, and these pretty little eggplants onto skewers and then grill until smoky and soft.
