UH Long Green, as the name implies, comes from the University of Hawaii’s continued success in breeding vegetables that produce well in heat and humidity, and taste great as well. This is a long and slender eggplant in a pale green color. It is both very tender and excellent for cooking. The plants are 3 feet high in most gardens, and they were 2 feet tall planted in the ground in my garden. Fruits are 8-12 inches long. I found that I prefer the flavor and productivity of UH Long Green to my old favorite, Thai Long Green.
