“Lombok” is said to be a landrace hot pepper collected in Yogyakarta, Indonesia. I really enjoy chiles such as this one, where you can use the end 1/3 of the fruit with little to no heat but definite sweetness, then add the thicker placenta ribs and seeds closer to the stem end for excellent heat and spice. This is a landrace pepper with possible small variations from one source to another, but in general it is a slender, shiny chile that is used to make Sambal paste.
